My mother is from Japan. Every birthday in our family she usually bakes us a cake and decorates it in a way we’ve come to take for granted throughout the years. When I was a senior in high school, some friends came over to celebrate my 18th birthday with us. They were completely astounded by the level of quality my mother delivered in her homemade cakes! Apparently my mom had been creating her own version of Japanese styled cakes with fresh fruit and cream. This type of cake is not well known to most Americans – Go to any asian coffee shop and you’ll see what I mean.
Since I left home for school, I started making my own cakes, pushing them further and further. This last one was for one of my closest friends, Ding! We added mocha flavoring to the fresh cream. Inside the cake is a mixture of vanilla cream and mandarin oranges! I got a little creative with it and threw sliced almonds onto the sides. I loved the texture it added to the cake. Sooo yummy. Although it may look rich, it’s actually quite light and fluffy! 🙂 Special thanks to the boyfriend for help. We decided to make one for ourselves too!
